Sugar, an important food commonly also known as sucrose, is a white, crystalline substance that tastes sweet, is a carbohydrate and 100% soluble in water. Sugar is a natural combination of fructose and glucose. Raw sugar is produced in large refineries through a process that involves crushing either cane sugar (*Saccharum officinarum*) or sugar beet root (*Beta vulgaris*) to extract juice. This juice is then boiled to remove water, resulting in the production of unrefined raw sugar, which is sometimes referred to as panela (also known as piloncillo or rapadura).

Cane sugar is typically cultivated in tropical regions, while beet sugar is primarily sourced from the cooler climates of Europe and parts of North America.

Europe stands as the world's largest producer of beet sugar, contributing to approximately half of the global production. In contrast, the majority of the world's sugar is derived from cane, with beet sugar accounting for only about 20% of total production. The lifting of production quotas in October 2017 has led to an increase in sugar production from beet sources.

Sugar comes in various packaging options, from tiny sachets of 10 grams to larger quantities like 50 kgs and even 1-MT BigBags.

The most frequently used package sizes are 50 kg, 25 kg, 12.5 kg, 2 kg, 1 kg, and 500 g.

During the 2019/2020 period, global sugar production reached approximately 166 million metric tons, slightly lower than in previous years. A total of 110 countries participate in this industry, with Brazil and India at the forefront. It is estimated that over 25 million metric tons are sold on the global market at prices below the market rate.

Indeed, the primary production of GMO sugar is currently concentrated in the United States and Canada, mainly derived from sugar beet. In fact, about 95% of the sugar beet grown in the U.S. is genetically modified, which accounts for roughly 50% of the total sugar produced in the country. In 2017, a Brazilian company was granted official permission to cultivate GMO sugar cane commercially, with planting activities starting in 2018. Indonesia approved GMO sugar back in 2013, but commercial cultivation has not yet commenced.
